Raspberry Coconut Energy Bars

If you're looking for quality nourishment and sustainable energy, these bars deliver!

High in antioxidant content, they supply important minerals like magnesium, calcium and zinc.


1 cup raisins

½ cup raspberries, puréed

3 Tbsp almond butter

1 cup sunflower seeds

1 cup pumpkin seeds

½ cup sesame seeds

3 Tbsp coconut flour

3 Tbsp coconut oil

½ cup shredded coconut


Soak the raisins in 1 cup boiled water for 5 minutes. Drain and let raisins cool. In a food processor, process all the seeds and raisins until medium ground. Add the raspberry purée, almond butter, coconut flour and coconut oil. Process all ingredients until desired texture is attained. Remove mixture from processor and place on a clean surface.


To shape into bars, flatten out the mixture. Place plastic wrap over top and using a rolling pin, roll mixture to desired thickness. Cut mixture into bars and sprinkle tops with shredded coconut. To shape into balls, roll mixture into balls and then cover with shredded coconut. Store in the fridge or freezer.
