Pumpkin Spice Muffins

Pumpkin is a healthy and nutritious vegetable packed with antioxidants, vitamins, minerals and fiber.
It contains beta-carotene, a powerful antioxidant, which the body converts into Vitamin A.
Beta-carotene supports the immune system and aids in the reduction of oxidative stress in the body. Vitamin A helps to promote the health of the eyes, teeth and skin and to maintain the skeletal and soft tissue framework.
Pumpkin Spice Muffins
1 ½ cups whole wheat flour
⅓ cup cane sugar
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 tsp cinnamon
½ tsp nutmeg
1 tsp ginger
¼ tsp cloves
⅓ cup sunflower seeds
¼ cup sesame seeds
¼ cup brown flax seeds
1 ¼ cups pumpkin purée
⅓ cup unsulphered molasses
⅓ cup sunflower oil
2 eggs
Blend the dry ingredients in a large bowl. Mix the pumpkin purée, molasses, oil and eggs until well blended. Stir in the dry mixture just to combine. Bake at 375° for 25-30 minutes. Allow the muffins to cool for 10 minutes in the pan. Transfer to a wire rack to cool completely. Yields 12-15 muffins. Enjoy!
